Nestled within the iconic multi-coloured HOTA Gallery, Palette takes inspiration from HOTA's major exhibitions showing the natural blend of art and food, and showcasing an ever-changing one-of-a-kind menu that is sure to impress.
The visually striking venue is a continuation of HOTA Gallery's colourful theme, with warm timber tones with pops of colour and captivating lighting creating the perfect backdrop for the stunning food.
Speaking of the food, Palette Restaurant boasts multiple mouthwatering menus encompassing a seasonal tasting menu, vegetarian menu, a la carte menu and Sunday High Tea menu.
The modern Australian menu showcases the freshest ingredients, sourced locally and expertly prepared by a dedicated team led by Executive Chef, Dayan Hartill-Law.
The offering inludes a selection of palate-pleasing plates such as Moreton Bay cuttlefish with chawanmushi, native furikake and yuzu; Australian Bay lobster souffle with bisque, bay lobster caviar and fennel; Hervey Bay scallop with umami cornflakes, smoked pork consommé, sea grapes; Uovo in Raviolo collected with warrigal, ricotta, cockscomb; Alba lamb with eggplant, artichoke and zuchini flower; and Bistecca Angus from the Chinchilla Station, 600g dry aged sirloin on the bone with Paris mash, fioretto pine nuts, currants and capers.
Finish off the feasting festivities with a range of stunning desserts like the Tuscan Marble (Little cocoa chocolate hand made by Alicia Chapman with fig in variations), peach soufflé, citrus baba, native Tiramisu and Monte Rosso Tart (puff pastry, calvados and Stanthorpe apple). An extensive drinks list includes a spectacular selection of sparkling white and red wines, beer/cider, specialty cocktails and non-alcoholic beverages.
